Peanut Butter Cookie Dough Bites


  • 3 Cups of Rolled Oats
  • 4 Tbsp. of Coconut Oil
  • 4 Tbsp. of Peanut Butter
  • 1/2 Cup of Honey
  • 2 Tsp. of Pure Vanilla Extract
  • 1/4 Cup of Coconut Flour
  • 1/2 Tsp. of Sea Salt
  • Optional: 4 Tbsp. of Mini Dark Chocolate Chips


  • Blend oats until it's a fine flour then set aside.
  • In a mixing bowl, combine coconut oil, peanut butter, honey, and vanilla then mix until smooth with a mixer.
  • Add coconut flour, oat flour, and salt to the mixing bowl then beat until combined. Fold in chocolate chips at this time, if adding to cookie dough
  • Take a handful of the dough and squish it into your hand to make balls. I like to make marble sized balls for me and pebble sized balls for my little one. Place bites on a cookie sheet lined with parchment paper then put in the freezer until firm. Then, put the bites in a freezer bag for easy access for snacking!
  • Notes

    I used my Ninja Smoothie attachment to blend the oats 3/4 cup of oats at a time. It was quick and easy to clean up!

    Also, to mix the dough I used my Kitchen Aid Mixer. You could also use a hand mixer or even try using your blender!
